Guest Post: Ariel's Favorite Open Face Chicken Sammich



Today we have a guest post from one of my best friends who I've known since I was about eight years old, Ariel Tolefree! I asked her to write a little bio on herself so you all can get to know her!

So last week, Ariel was thinking of making a BBQ Chicken Pizza and asked me for some recipe tips and the more we talked, the more this pizza turned into a sandwich of sorts. She knew she definitely wanted to use some french bread and wanted to keep the main BBQ Chicken Pizza-esque aspect but she didn't want to use pizza sauce. Eventually we thought Olive Oil and Garlic would make a nom-tastic spread.



The best part about this recipe is that not only was it incredibly delicious, it was super quick to make! Definitely a plus when you're tight on time but still want something delectable!


Ariel's Favorite Open Face Chicken Sammich
makes one open face sammich

Ingredients:
1/2 Small Baguette (French, Sourdough, etc.)
2 tsp Olive Oil
Salt
Pepper
2 tsp Garlic Paste
1/2 cup Mozzarella Cheese (shredded)
1/2 cup Grilled Chicken (diced)
1/4 cup Sun Dried Tomatoes (julienned/cut into strips)

Directions:
1. Slice your baguette in half. Take your half baguette and split it lengthwise.
2. Brush your halves with Olive Oil and add Salt and Pepper.
3. Spread about a teaspoon (or more if you're a garlic lover like me!) of Garlic Paste on each baguette half
4. Split the Mozzarella, Grilled Chicken and Sun Dried Tomatoes amongst both baguette halves
5. Bake assembled baguettes for 7-8 minutes at 450 degrees in a toaster oven
