In keeping with our latest three ingredient theme I present to you: Three Ingredient Chocolate Chip Cookies! I'm sure you're thinking, "Impossible! You can't make cookies with just three ingredients!" But not only does this recipe make chocolate chip cookies, it makes gluten free vegan chocolate chip cookies.

My amazing friend Jenny shared this recipe with me last week and they looked too easy and delicious not to post!
Once again the secret lies in the banana. Similar to our One Ingredient Banana Ice Cream we had on the site a couple weeks back, the banana is the glue that holds these cookies together...literally!
Three Ingredient Vegan/Gluten Free Chocolate Chip Cookies!
1 medium ripe banana (mashed)
1/2 cup quick oats
toppings (i.e. Vegan Chocolate Chips, regular chocolate, nuts, raisins)
1. Preheat oven to 350 degrees, toaster oven to 325 degrees
2. grease cookie sheet (important!!)
3. mix ingredients
4. scoop and put on cookie sheet (makes about 6-8)
5. bake 12-15 minutes
6. cool then enjoy!
